Our Gut Healthly Chocolate and Banana Oat Muffins recipe uses Troo Energise Porridge+ and Spoonful of Fibre Chocolate Inulin Syrup!🍫 They're both packed full of fibre, over 5g fibre per muffin, to help promote good gut health, low in sugar and gluten free! This recipe could also easily be made vegan-friendly by substituting eggs for a plant-based alternative.⠀
Ingredients
- 260g Troo Energise Porridge+ Oats (160g blended, 100g unblended, extra to sprinkle on top)⠀
- 2 large overripe bananas ⠀
- 2 eggs (lightly beaten)⠀
- 2 tbsp Troo Spoonful of Fibre Chocolate Inulin Syrup⠀
- 180ml milk of your choice⠀
- 2 tsp vanilla⠀
- 2 tsp baking powder⠀
- 1/2 tsp baking soda⠀
- 3 tbsp cocoa powder⠀
- 100g Dark Chocolate Chips (extra to sprinkle on top)⠀
Instructions
- Preheat the oven to 180°C. Place 160g of the oats in a blender and blend/pulse until they reach a rough, flour like consistency.⠀
- Mash bananas well in a bowl, they should have no lumps. Add eggs, honey, milk and vanilla. Mix to combine.⠀
- Add dry ingredients (including both 160g blended oats and 100g unblended oats) to wet ingredients and mix until just incorporated. Then fold in 100g of chocolate chips.⠀
- Scoop the batter into muffin cases in muffin tins until 3/4 full. The recipe makes approximately 15 muffins. ⠀
- Sprinkle muffin tops with reserved oats and any extra chocolate chips, press down lightly.⠀
- Bake at 180 for about 20-25 minutes, a toothpick inserted in the centre of a muffin should come out clean.⠀
